PDF text appearing as X's

Occasionally, when adding text to a PDF in Adobe Acrobat, you may notice that some letters/characters change to an X symbol in a box, as shown below:

This is a known font issue with the Minion Pro font.  You can highlight the text and change it to something standard, such as Arial or Times New Roman, to get the text to appear properly.
