Although you may have your default web browser set to Edge or Chrome in Windows "Default Apps" settings, Outlook has its own default browser setting. It is usually set to Microsoft Edge, so even though you may prefer to use Chrome, links in email messages in Outlook may be opening in Edge.
To adjust this in Outlook, go to File --> Options --> Advanced tab, and change the following setting:
